Weekly Meal Round-Up | Nov. 27-30

Hello hello! I hope everyone’s had an easy week back in the swing of things after a long weekend! As much as I enjoyed all of the wonderful foods that accompany thanksgiving (and the mountains of leftovers), I was glad to be back to the food I’m used to eating and that makes me feel my best!

Breakfast & Lunch (Meal Prep)

My weekly meal prep this week included my usual egg muffins (made Monday night) and apples & almond butter for breakfast, and a quick chickpea black bean chopped salad for lunches. Monday and Tuesday I ate meals from my freezer, as I didn’t have food prepped because I was in Texas all weekend. It’s SO GREAT to have a freezer stocked with portioned, homemade, nutritious food for when I’m in a pinch. This is definitely something I’ll be talking more about on the blog soon. I was also getting tired of soft boiled eggs, so I took a break from those for a snack and packed some Krave jerky!

Dinners

Below are my dinners for Monday-Thursday! Everything was pretty quick and easy this week!

Monday: Beef, Potatoes, and Green Bean “Casserole”

Beef, Potatoes, and Green Bean Casserole
Made some thin cut beef for dinner Monday – I marinated it in seasonings while I made everything else, and then just broiled it for 4 minutes – easy!! Roasted some potatoes and made a green bean casserole-esque side dish since I didn’t get to have that usual this Thanksgiving. Instead of using cream of mushroom soup, I used some mushrooms, almond milk, chicken broth and almond flour to thicken it up a bit. I then grilled some onions and cashew pieces as my “french fried onions” on the top. I threw this in the oven for a couple of minutes and YUM! Compliments from David especially, so I know it was a hit! It didn’t stay together like a casserole, but the taste was great!

Tuesday: Chickpea & Kale Salad

I really missed my greens this week, so this kale salad hit the spot! I dressed the kale with olive oil and lemon juice, and topped it all with chickpeas, tomato, goat cheese and avocado! Yum!

Wednesday: Tuna Noodle Casserole

Made this recipe, one of our regulars, on Wednesday. It’s always a good one!! I used a combo of Banza chickpea pasta and brown rice pasta I had left over.

Thursday: Chicken Stir Fry With Cauliflower Rice

Chicken Stir Fry
This chicken stir fry consists of diced chicken, onions, bell pepper, eggs, coconut aminos (like soy sauce), ginger, green onions, and cauliflower rice! If you haven’t tried cauliflower rice yet, you’re missing out!
